People were literally begging for the recipe. The Cowboy Candy (aka candied jalapeños) makes more than you need for the ribs, which should make you happy. Try them on burgers, dogs, with cheeses, in cocktails, or any other way you can imagine.
Matt Pittman, founder and CEO of Meat Church BBQ, takes jalapeño poppers to a whole new level by smoking the cream cheese for the filling and, even better, adding brisket. “People will love these,” promises Matt. A clafoutis may not be the easiest dessert to pronounce (clah-foo-TEE), but this French cross between a custard and a cake is one of the easiest desserts to make. You basically mix some flour, milk, sugar, and eggs in a blender, pour it over some fruit, and bake. The classic uses fresh cherries, but Diva prefers a blueberry clafoutis flavored with lemon zest and vanilla. Feel free to use whatever tender fruit looks good—peaches, blackberries, apricots, or raspberries, or even a mix.
Classic coffee cake bakes up tender and aromatic on the Traeger. Delicious as is, you can also dress the cake up with a bit of icing. To make the icing, simply mix 1/2 cup powdered sugar with 1 to 2 tablespoons of milk, depending on the consistency you're after. A splash of vanilla, about 1/4 teaspoon, is nice, too. Dip a fork into the glaze and drizzle it over the cake as desired.
