    When ready to cook, set the Traeger temperature to 180℉ and preheat with the lid closed for 15 minutes.

    Season the pork chops liberally with Traeger Pork & Poultry Rub.

    Insert the probe into the center of the pork chop, avoiding the bone. Place the pork chops directly on the grill grates. Cook until the internal temperature reaches 130F, about an hour and 15 minutes.

    Remove the pork chops from the grill. Place a cast iron pan over medium high heat. Add butter and cook until melted. Add herbs and follow with the pork chops (1 or 2 at a time depending on their size and the size of the pan). Sear 3 to 4 minutes per side until deep brown and the internal temperature registers 140F. Remove from the pan and set aside to rest.

    Repeat with remaining pork chops and serve once rested.
