Give your bird some serious color with this good ole' cast-iron cooking technique. Citrus, butter and fresh herbs are all you need to give this feathered flyer ridiculous flavor.

4 Pound (1 lb) game birds or equivalent
4 Tablespoon butter
As Needed Salt
As Needed Black pepper
2 Whole lemon, halved
1 Bunch fresh parsley
1 Bunch fresh thyme
1 Bunch fresh rosemary

    When ready to cook, set the grill temperature to high and preheat, lid closed for 15 minutes. Place a large cast iron skillet in the grill while preheating.

    While the grill comes to temperature, rub the game birds all over with 2 tablespoons of butter and season the inside and outside with salt and pepper.

    Add half a lemon, a sprig of parsley, thyme, and rosemary inside the cavity of each bird.

    Truss the birds by simply tying the legs together with string. Add remaining 2 tablespoons of butter to cast iron. Set birds in the hot cast iron skillet and roast for 45 to 60 minutes until nicely browned, the internal temperature has reached 165 degrees F.
