Any Traeger will cook a great turkey. For most families (8–12 people), the Westwood™ or Woodridge® handles the job with room for sides. Cooking for a bigger crowd or want the most control? The Westwood ™XL or Woodridge® Pro gives you more space and innovative features such as Super Smoke™ mode for an extra boost of smoke flavor. The most important thing is the cook, not the grill.
Turkey Blend is our recommendation—it features maple and hickory hardwoods, and a hint of rosemary, designed specifically for poultry. It delivers fruit-wood sweetness with savory depth without overpowering the bird. Apple is the mildest option for smoke-shy guests, and Cherry delivers a beautiful mahogany color.
Plan for 1–1.5 lbs. of whole bird per person—bone and cavity account for a lot of that weight. Quick guide: 5–8 people → 10–12 lb. · 9–12 people → 16–18 lb. · 13+ people → two+ 16 lb. birds. Two smaller birds always beats one giant bird: more even cooking, faster finish, and a backup if one runs long.
Allow 24 hours in the fridge for every 4–5 lbs. of turkey. A 16 lb. bird needs 3–4 days to fully thaw. For the full Thursday cook timeline: move a frozen turkey to the fridge on Sunday. It will be ready to brine by Tuesday night.
Yes — if you have the time, always brine. Brining is one of the biggest factors in getting a juicy turkey vs. a dry one. The salt solution penetrates the meat and keeps it moist even if you cook a few degrees past the target temp. Try a wet brine (24–48 hrs.) for maximum juiciness, or a dry brine (salt rub, uncovered in fridge 24–72 hrs.) for crispiest skin. Both beat skipping it.
Wet brine wins on juiciness. Dry brine wins on crispy skin. Wet brine: submerge the bird in salted water for 24–48 hrs.—the liquid absorbs throughout, keeping the meat moist throughout the cook. Dry brine: rub generously with salt, refrigerate uncovered—draws moisture out of the skin so it crisps at high heat. Doing spatchcock? Dry brine. Doing classic smoked? Wet brine is the safer first-timer choice.
Depends on your method. Classic roasted: 325°F throughout—traditional result, fastest whole-bird method. Smoked: start at 225°F for the first 2–3 hours (builds smoke flavor), then crank to 375°F to crisp the skin and finish. Spatchcocked: 375°F-400°F the entire cook—high heat on a flat bird = fast, even cooking and maximum crispy skin. For all methods, pull at 160°F internal breast temp, which carries over to 165°F during the rest period.
- Dry brine for the crispiest skin. After brining, pat completely dry and refrigerate uncovered overnight—dry skin is crispy skin.
- Don't baste during the cook, adding liquid keeps the skin soft.
- High-heat finish. After the low-and-slow phase, crank to 375–400°F for the last 30–45 minutes to render the fat and crisp the exterior.
- Spatchcock. More surface area exposed to direct heat = more crispy skin.
Pull at 160°F in the thickest part of the breast. Carry-over cooking during the rest brings it to the USDA-safe 165°F. Thigh and dark meat: 175°F—dark meat has more collagen and benefits from a higher finishing temp. Insert the probe without touching bone—bone conducts heat and can give a falsely high reading.
Minimum 30 minutes for a whole bird. 45 minutes for anything over 16 lbs. This is the most skipped step in Thanksgiving cooking and the #1 reason turkeys run dry. During rest, the interior of your turkey will relax and reabsorb the juices pushed to the center during cooking. Cut too early and those juices run onto the cutting board. Tent loosely with foil—not tightly, or the steam will soften the skin.
