Grilled Cabbage Steaks With Warm Bacon Vinaigrette

Blow your taste buds away with this wood-fired take on grilled cabbage. Cabbage Steaks are grilled over cherry wood and drizzled with a melt-in-your mouth bacon vinaigrette.

  • 3 Stripsthick-cut lean bacon, cut into 1/4 inch strips
  • 1 Largeshallot, minced
  • 2 Tablespoonsherry vinegar
  • 1 Tablespoonwhole grain mustard
  • 1 Teaspoonchopped thyme
  • 2 Tablespoonolive oil, plus more as needed
  • 1 head green cabbage, cut into 3/4 inch thick slices (about 6 steaks)
  • To TasteSalt
  • To Tasteblack pepper

Steps

  • Step 1

    When ready to cook, set Traeger temperature to 450°F and preheat, lid closed for 15 minutes.

  • Step 2

    For the Vinaigrette: In a large skillet, cook the bacon in 2 tablespoons olive oil over medium-high heat until browned and crisp. Remove bacon from heat and stir in the shallot, vinegar, mustard and thyme then set aside.

    • 1 Large shallot, minced

    • 2 Tablespoon sherry vinegar

    • 1 Tablespoon whole grain mustard

    • 1 Teaspoon chopped thyme

    • 2 Tablespoon olive oil, plus more as needed

  • Step 3

    Brush cabbage steaks with olive oil and season with salt and pepper. Place cabbage steaks directly on grill grate and grill for 5 minutes per side.

    Remove cabbage steaks from grill and drizzle with bacon vinaigrette. Enjoy!
