2 Teaspoon quick-rise yeast
1 Cup warm water (110°F)
1 Teaspoon kosher salt
1/4 Cup Sugar
3 1/2 Cup all-purpose flour, plus more for dusting
1/4 Cup (1/2 stick) unsalted butter, cubed, softened, plus more for greasing
1 Large Egg
Melted butter, for brushing
Flaky sea salt, for sprinkling

    In a small bowl, combine the yeast and 1 cup warm water. Let sit until foamy, 5-10 minutes.

    In the bowl of a stand mixer fitted with the dough hook, combine the flour, sugar, and kosher salt. Mix on low speed to combine. With the mixer running, pour in the yeast mixture into the dry ingredients and mix until incorporated, scraping down the sides of the bowl as needed.

    Increase the mixer speed to medium. Add the egg and mix until the dough is homogenous. With the mixer running, add the butter, one cube at at time, and beat until incorporated. Increase the mixer speed to high and continue mixing until the dough is elastic and tacky, but not sticky, 3-5 minutes.

    Grease a large bowl with butter. Shape the dough into a ball, then place in the bowl, cover with a kitchen towel, and let rise in a warm place until nearly doubled in size, 30-40 minutes.

    Turn the dough out onto a lightly floured surface and divide into 8 pieces. Shape each portion into a tight ball by placing on the counter with the the seam on the bottom and rolling with a cupped hand on top.

    Grease a 10-inch cast iron skillet with butter. Arrange the dough balls in the pan, spacing evenly. Cover with a kitchen towel and let rise for 20 minutes.

    When ready to cook, set the Traeger to 375℉ and preheat with the lid closed for 15 minutes.

    Brush the tops of the rolls with melted butter, then sprinkle with flaky sea salt.

    Place the skillet on the grill grates, close the lid, and bake until the rolls are lightly browned and the internal temperature reaches 200°F, about 30 minutes. Serve hot with butter. Enjoy!
