For those once-in-a-blue-moon times when you do have leftover brisket, go with everyone’s childhood favorite and whip up a BBQ brisket grilled cheese on Texas toast.

1 Tablespoon | unsalted butter, at room temperature |
2 Slices | American cheese |
4 Ounce | cooked brisket |

When ready to cook, set the Traeger temperature to 500˚F and preheat with the lid closed for 15 minutes.

Place a skillet or griddle directly on the grill grates with the flat side up to preheat.

Butter one side of each piece of bread. Place the buttered side of one piece down on the skillet or griddle, top with one slice of American cheese, the brisket, second slice of cheese, then top with the other piece of bread buttered-side-up.

Close the grill and cook for 5-7 minutes. Flip the sandwich and cook for 5 minutes more until the cheese is melted, bread is toasted, and the brisket is warmed through.

Remove the BBQ brisket grilled cheese from the grill and slice in half. Enjoy!
