S'mores Brownies

Our s'mores brownies bring campfire vibes to a chocolatey classic. This decadent dessert is stacked with gooey brownie goodness, golden toasted marshmallows, crunchy graham crackers, and classic Hershey’s chocolate. Finished with a sprinkle of flaky sea salt, they’re everything you love about s’mores, baked into the ultimate brownie bar.

Ingredients

Brownie Mix
1 Whole(18-oz) box brownie mix, preferably Ghirardelli double chocolate
1 Wholeegg
1/3 Cupvegetable oil

7 Wholegraham crackers, more as needed
1 Cupmarshmallow fluff
As Neededcooking oil spray
1 Cupmini marshmallows
1 Whole(1.55 oz) Hershey's bar, broken into small pieces

Before You Get Started

We’ve listed the eggs and vegetable oil required by the brownie mix we used in testing. If using another brand, add eggs and oil as that recipe directs. Marshmallow fluff is notoriously sticky, but a light coating of nonstick cooking spray on anything it touches—measuring cups, bowls, and spoons—makes it easier to handle. This recipe is a great excuse to break out a kitchen torch, but if you don’t have one, the broiler works just as well.


Steps

  • Step 1

    When ready to cook, set your Traeger to 375°F and preheat with the lid closed for 15 minutes. Prepare the brownie mix according to package directions. 

    Ingredients
    • 1 Whole (18-oz) box brownie mix, preferably Ghirardelli double chocolate

    • 1 Whole egg

    • 1/3 Cup vegetable oil

  • Step 2

    While your grill is preheating, line a 9-by-9-inch metal baking pan with a strip of parchment paper long enough to cover the bottom and extend over two opposite sides to create a sling. Arrange a single layer of graham cracker sheets, top side down, in the pan. Break crackers as needed to fill large gaps (they do not need to fit snugly).

  • Step 3

    In a medium microwave-safe bowl, microwave the Marshmallow Fluff on high in 10-second intervals, stirring after each, until softened and beginning to expand (about 30 seconds total). Stir until smooth.

    • 1 Cup marshmallow fluff

  • Step 4

    Lightly coat two spoons with cooking spray. Drop spoonfuls of softened Marshmallow Fluff over the graham crackers. Dollop the brownie batter around the fluff. Spray a table knife with cooking spray and drag it through the fluff and batter in multiple directions to create a marbled effect.

  • Step 5

    Place the pan on the grill grates. Close the lid and bake for about 45 minutes, or until the brownie is puffed and slightly jiggly in the center. Times will vary depending on the weather and your grill model.

  • Step 6

    Remove and discard the parchment. Transfer the brownie to a heatproof surface (like a baking sheet). Scatter mini marshmallows on top. Using a kitchen torch, lightly toast the marshmallows, then scatter the chopped chocolate on top and torch again to partially melt. Crumble 1 graham cracker over the top and sprinkle with sea salt.

    • 1 Cup mini marshmallows

    • 1 Whole (1.55 oz) Hershey's bar, broken into small pieces

    • 1 Whole graham crackers, more as needed

    • To Taste flaky sea salt, preferable smoked

  • Step 7

    Alternatively, if you don’t have a kitchen torch: leave the brownie in the pan. Top with mini marshmallows and chopped chocolate, and broil on high for 2½ minutes, rotating the pan halfway through. Sprinkle with sea salt and 1 crumbled graham cracker. Let cool for 5 minutes. 

  • Step 8

    Spray a large knife with cooking spray, cut the brownie into squares, and serve.
