Smoked Turkey BLAT Sandwich (Bacon, Lettuce, Avocado & Tomato)

Turn your BLT into a BLAT sandwich (bacon, lettuce, avocado, and tomato) by adding avocado smashed with a little lime juice. Layer on some sliced smoked turkey—cut from one you smoked yourself or procured at the deli—for a hearty sandwich sure to become a favorite.

Ingredients

1 heirloom tomato, sliced
Kosher salt
1 small or 1/2 large ripe avocado
1 Teaspoon fresh lime juice
6 slices thick cut bacon
4 slices thick, sturdy white sandwich bread
Mayonnaise for bread
2 Ounce crisp lettuce leaves
6 Ounce thinly sliced smoked turkey

    Slice the tomato and sprinkle the slices lightly with salt to bring out the tomato's flavor. Set aside.

    Coarsely mash the avocado with the lime juice and a pinch of salt. Set aside.

    Preheat 1 zone on the flat top on medium heat for 8 to 10 minutes. Line a plate with paper towel.

    Lay the bacon on the hot surface and cook until browned on one side, 4 to 5 minutes. Flip and cook until crisp, 1 to 2 minutes more. Transfer the bacon to the paper towel-lined plate. Scrape away most of the bacon fat, leaving the surface lightly coated.

    Lightly spread some mayonnaise over one side of each bread slice. Arrange the bread, mayo-side down on the hot surface. Cook until nicely browned and then flip to toast the other side.

    To assemble the sandwiches, top the mayo-side of two of the bread slices with the mashed avocado. Top with the lettuce, tomato, bacon, and turkey. Top with the remaining bread, mayo side down. Press lightly with a burger press or similar to slightly compress and make easier to eat. Slice the sandwiches in half and serve. Enjoy!
