Turkey-Roulade

Though a whole roasted turkey may be the traditional centerpiece of a Thanksgiving or Friendsgiving feast, this turkey roulade—a boneless turkey breast stuffed with a breadcrumbs flavored with leeks, cranberries, and clementines—is a worthy (and arguably more delicious) alternative. The roulade is easy to cut into neat slices, and leftovers can be easily carved for superlative day-after sandwiches. NOTE: The filling and pan sauce get spiked with some bourbon, but if you prefer, you can substitute additional turkey or chicken stock.

Our regular Cowboy Candy (aka candied jalapeños) was such a hit that we decided make a version for the holidays by adding tart cranberries to complement the sweet heat. Perfect with turkey (you can sub it for the usual cranberry sauce) it would also go well with salmon and lamb and is great paired with cheese.

The Kentucky hot brown has been a tradition since its creation at Louisville's Brown Hotel in 1926. The open-face sandwich, made on the Flatrock griddle, is a great way to use leftover Thanksgiving turkey, but you can make it with deli turkey as well.
