You don't have to be in Mexico to enjoy mouthwatering tostadas. A little pollo, a little fuego, and you're on your way.

When ready to cook, set the temperature to 350 degrees F and preheat, lid closed, for 10 minutes.

While grill heats, trim excess fat and skin from chicken thighs.

Season with a light layer of salt and pepper.

Place chicken thighs on the grill grate and cook for 35 minutes.

Check internal temperature; chicken is done when a thermometer inserted reads 175 degrees F. Remove from the grill and let rest for 10 minutes before shredding.

Place tostadas on grill while chicken is resting for 5 minutes.

Build tostadas starting with refried beans, sliced lettuce, shredded chicken, tomatoes, green onions, cilantro, guacamole. Enjoy!
