Units of Measurement:
main
12 Whole lime wedges, slit in center
1/2 Cup turbinado sugar
1 1/2 Cup Fresh Squeezed Lime Juice from Grilled Limes
3 Cup silver tequila
4 1/2 Cup Cointreau
3/4 Cup Traeger Smoked Simple Syrup
1/2 Cup kosher salt
As Needed ice

Step

  • 1

When ready to cook, start the Traeger according to grill instructions. Set the temperature to 450 degrees F (set to 500 degrees F if using a WiFIRE-enabled grill) and preheat, lid closed, for 10 to 15 minutes.

  • 2

Cut limes in half, dip into turbinado sugar and place on preheated grill flesh side down.

  • 3

Grill for 5 minutes or until you get some char. Remove limes from grill and juice them.

  • 4

Add lime juice, tequila, Cointreau, and Smoked Simple Syrup to a pitcher. Stir to combine.

  • 5

Place the Smoked Cocktail Salt in a low sided dish just big enough to fit the rim of the glass into.

  • 6

Run the lime around each glass rim, dip into the salt and fill with ice.

  • 7

Garnish with the lime wedge and pour in premixed margarita mixture. Enjoy!
