This brunch-worthy cocktail is calling your name this weekend. Sugar-coated grapefruit is grilled on the Traeger until slightly caramelized then squeezed into a mix of fresh lemon juice, ginger beer, Traeger Smoked Simple Syrup, and vodka.

1/2 Cup | turbinado sugar |
12 Ounce | vodka |
1 1/2 Ounce | freshly squeezed lemon juice from 1 lemon |
3 Ounce | Traeger Smoked Simple Syrup |
8 Sprig | fresh mint leaves |
12 Ounce | ginger beer |
2 | grapefruit sliced into 1/2 inch rounds, for garnish |

When ready to cook, set Traeger temperature to 500℉ and preheat, lid closed for 15 minutes.

Coat the sliced grapefruit on both sides with turbinado sugar and place on preheated Traeger. Grill 3 minutes per side or until there are grill marks. Remove from grill and set aside until cool enough to handle.

Squeeze grilled grapefruit to extract juice and strain (you should end up with about 16 ounces of juice).

Add vodka, grapefruit juice, lemon juice, Traeger Smoked Simple Syrup and 1 sprig of mint leaves to a pitcher and stir vigorously with a cocktail spoon.

Add a handful of ice and stir vigorously for 30 more seconds.

Pour into to 6 rocks glasses filled with ice and top with ginger beer.

Garnish with a grilled grapefruit slice and a mint sprig. Enjoy!
