Fresh from the hunt these Traeger roasted Cornish game hens will be the sweet meat of triumph.

5 Whole | Cornish game hens |
15 Sprig | fresh thyme |
2 | oranges, quartered |
2 Tablespoon | extra-virgin olive oil |
1 Bottle | Mandarin glaze |

When ready to cook, start the Traeger and set the temperature to 375 degrees F. Preheat lid closed, for 10 to 15 minutes.

Create the spice mixture: Combine onion powder, granulated garlic, Jacobson’s salt, and ground ginger.

Remove the hens from the packaging; remove any giblets from each cavity and pat them dry with a paper towel. Place 4-5 sprigs of fresh thyme into each cavity, along with 1 orange wedge.

Sprinkle each bird with the spice mixture, and then rub with olive oil. Tie the legs together with butchers twine. Place the Game hens on the grill and cook for 20 minutes.

After 20 minutes, brush each hen with a mandarin glaze of your choice. Let them cook an additional 20 minutes and brush again with the glaze. Cook to an internal temperature of 160 degrees. Enjoy!
