To Make Bacon: When ready to cook, set the Traeger to 325℉ and preheat, lid closed for 15 minutes.

Place bacon in a single layer on a cooling rack that fits inside a baking sheet pan. Cook in Traeger for 15-20 minutes or until bacon is browned and crispy. Reserve bacon for later. Let the fat cool slightly; you’ll use the fat to infuse the bourbon.

Combine 1/4 cup of warm (not hot) liquid bacon fat with the entire contents of a 750ml bottle of bourbon in a glass or heavy plastic container.

Use a fork to stir well. Let it sit on the counter for a few hours, stirring every so often.

After about four hours, put bourbon fat mixture into the freezer. After about an hour, the fat will congeal and you can simply scoop it out with a spoon. You can fine-strain the mixture through a sieve to remove all fat if desired.

Combine ingredients with ice and stir until cold. Strain over fresh ice in an Old Fashioned glass and garnish with reserved bacon and orange peel. Enjoy!
