Step your party appetizer game up with this smoked and pickled green beans recipe. Simply smoke the blanched beans for about 45 minutes then submerge them in a homemade brine for 24 hours.

*This recipe requires overnight preparation. When ready to cook, set grill temperature to 180°F and preheat, lid closed for 15 minutes.

Place the blanched green beans on a mesh grill mat and place mat directly on the grill grate. Smoke the green beans for 30-45 minutes until they’ve picked up the desired amount of smoke. Remove from grill and set aside until the brine is ready.

In a medium sized saucepan, bring all remaining ingredients, except ice water, to a boil over medium high heat on the stove. Simmer for 5-10 minutes then remove from heat and steep 20 minutes more. Pour brine over ice water to cool.

Once brine has cooled, pour over the green beans and weigh them down with a few plates to ensure they are completely submerged. Let sit 24 hours before use. Enjoy!
