Belgium Waffle with Smoked Blueberry Sauce

1 Cupblueberries
1/2 Wholefresh lemon juice
5/8 Cupsugar
1 1/2 Cupflour
1 Teaspoonbaking powder
1/4 Teaspoonsalt
1 1/4 Cupmilk
3 Wholeeggs
3 Tablespoonbutter, melted

  • Step 1

    When ready to cook start the Traeger according to grill instructions. Set temperature to 225 degrees F and preheat, lid closed 10-15 minutes.

  • Step 2

    Spread blueberries out on a sheet tray and place directly on the grill grate. Smoke for 30 minutes. Remove from grill and transfer to a saute pan.

  • Step 3

    Add lemon juice and sugar and bring to a simmer over medium heat. Reduce the heat to low and simmer for 15 minutes until liquid is syrupy.

  • Step 4

    While the blueberry sauce is cooking, increase the temperature on the grill to 450 degrees F (set to 500 degrees F if using a WiFIRE-enabled grill) and preheat, lid closed 10-15 minutes.

  • Step 5

    Spray the interior of a cast iron waffle iron with nonstick spray and place directly on the grill grate to preheat.

  • Step 6

    In a medium bowl mix together dry ingredients for waffle batter. In a separate bowl whisk together milk and eggs.

    • 1 1/2 Cup flour

    • 2 Tablespoon sugar

    • 1 Teaspoon baking powder

    • 1/4 Teaspoon salt

    • 1 1/4 Cup milk

    • 3 Whole eggs

  • Step 7

    Combine milk mixture with flour whisking gently making sure you don’t over mix. When milk is fully incorporated gently whisk in melted butter.

    • 3 Tablespoon butter, melted

  • Step 8

    Working in batches, pour batter in waffle iron, close and cook 10 minutes flipping halfway.

  • Step 9

    Top waffles with blueberry sauce and whipped cream if desired. Enjoy!
