An aromatic infusion of hibiscus flowers combines with a smoked simple syrup to create this unique wood-fired sparkler.

When ready to cook, set temperature to 180℉ and preheat, lid closed for 15 minutes.

Place water in a shallow baking dish and place directly on the grill grate. Smoke the water for 30 minutes or until desired smoke flavor is achieved.

Pour water in a small sauce pan and add sugar and hibiscus flowers. Bring to a simmer over medium heat and cook until sugar is dissolved.

Strain out the hibiscus flowers and transfer simple syrup to a small container and refrigerate until chilled.

Pour 1/2 oz smoked hibiscus simple syrup in the bottom of a champagne glass and top with sparkling wine. Drop in a few pieces of crystalized ginger to garnish. Enjoy!
